The fine dining outlet Bianca sul Lago by Emanuele Petrosino is the heart of the experience of our relais. In addition to the breathtaking sight of the lake that meets the mountains, the restaurant is the stage of the exciting and kaleidoscopic cuisine of Emanuele Petrosino, that travels through Italy to create an authentic and personal take of the infinite flavors and colors of our country.

Emanuele Petrosino
Born in 1986, already Michelin-starred in the restaurant I Portici in Bologna for 2020 and awarded by the Michelin Guide with the prestigious Best Italian Young Chef in 2019, Emanuele Petrosino brings to Lake Annone his incomparable experiences. Among them, in addition to the names of Francesco Sposito of Taverna Estia and Nino Di Costanzo of Danì Maison, the three-starred Piazza Duomo, Maison Pic and Restaurant Christopher Coutanceau.

Influenced by his previous experiences between Italy and France, Emanuele Petrosino's cuisine is pure emotion. His dishes enhance Italian tradition through the authenticity of the flavors and at the same time amaze with elements that are unexpected and in constant evolution.
Nature to be discovered
Nature is at the center of the menu of Bianca sul Lago and finds its best expression in the raw ingredients grown in the vegetable garden of the relais, hidden behind six ancient olive trees and surrounded by pomegranates, pears, apples, cherries and berries.
Chef's Table
Located in a warm and intimate dining room that overlooks the kitchen, the chef's table accomodates up to 20 guests and is the ideal setting for tailor-made culinary experiences, exclusive tastings and private events.
The cellar
The dishes of Bianca sul Lago are matched with a diverse selection of wines that spans from the great Italian and French classics to small producers worth to be discovered. The old vintages of memorable bottles and more than other two hundred references are stored in the cellar underneath Bianca.
